High Protein, Gluten Free Veggie Omelette With Besan (Chick Pea)

glycemic index foods.

This particular recipe is high in nutrition, low in fat and with immune system boosting qualities. The veggies ingredients may be changed to suit what’s in your vegetable crisper at any time.

Ingredients:

1 x cup Besan flour
1/4 x cup Yellow Pea Flour – 1/4 cup
300g x leafy green Silverbeet spinach
1 x large Spanish onion
1 x medium-sized yellow banana chilli – medium hotness
1/3rd cup green coriander leaves
1/2 x small carrot
2/3 x tspn sea salt
Apricot Kernel Oil

Method:

Finely chop onion, spinach, yellow banana chilli and coriander. Grate the carrot.

In a mixing bowl, add all the chopped veggies, chickpea flour, yellow pea flour and sea salt.  
Add about 1 cup water and mix all the ingredients well.  Add more water as required.  Combine well and remove all
lumps.

Heat a pan on a low heat and add about 1/2 tsp Apricot Kernel oil.  Pour a cup full of the batter and spread it
evenly in the pan.  Add little more oil and fry on both sides until golden brown.

Serve Veggie Omelette hot on a bed of steamed brown rice, lightly steamed Silverbeet spinach or steamed and
sliced sweet potatoes. Add lightly steamed and sliced Roma tomatoes on top and a sprig of coriander leaves.
