Easy Creamy Banana Pancake Breakfast Recipe

Looking for high protein breakfast ideas and recipes? Here’s one excellent recipe that gives you a super breakfast morning kick-off and is high in protein to chase off the mid-morningĀ  “blah’s!” It can be made the night before and is a great after-dinner dessert recipe also!

This recipe is ideal for diabetes sufferers as it greatly aids in regulating blood sugar levels.

Bananas are rich in potassium with minerals such as iron, (good for the ladies!) calcium, magnesium and phosphorus — recommended for all who are suffering with anemia, blood pressure, heart problems, depression, nervous disorders, stress, morning sickness, menstruation, ulcers, constipation, etc.

Bananas are such a convenient food and ideal for snacking, given their ready-to-strip natural jacket! They are plentiful in vitamins such as vitamin C, A & B, including folate.

The main ingredient in this recipe however is Organic Yellow Pea Flour which is high in fibre, high in protein and antioxidants and is low in fat. Yellow pea flour may assist in preventing and managing Type 2 Diabetes by replacing whole wheat flour as an ingredient in creating low glycemic index foods.

The secondary ingredient (apart from the bananas) is the Organic Almond Meal Raw which has cholesterol-lowering effects, given almonds’ innate ability to reduce heart disease risk — this may also be partly due to the antioxidant action of the vitamin E found in the almonds.

Almonds also promote good cardiovascular health by providing potassium and only small amounts of sodium, making Organic Almond Meal Raw an especially good choice to in protecting against high blood pressure and atherosclerosis.

Being organic means that harmful pesticides and herbicides have NOT been utilised in the production of these products by Natural Earth Health Products hence putting no unnecessary load on your body’s immune system!

INGREDIENTS:

2 x medium, ripe bananas, chopped,
2 x cups of Organic Yellow Pea Flour by Natural Earth Health Products,
1 x cup of Organic Almond Meal Raw by Natural Earth Health Products,
2 x tablespoons of Apricot Kernel Oil by Natural Earth health Products,
2 x tablespoons of Gen 1:29 LSA mix by Natural Earth Health Products,
300ml x thickened cream,
300ml x full cream milk (Goat’s milk or unhomogenised Jersey cow’s milk is highly recommended!)
2 x free range eggs,
1 x tablespoon of raw honey (drizzle last into the mixing bowl.)
Optional: 1 x teaspoon cinnamon spice

METHOD:

Combine all the ingredients into a large mixing bowl and blend to a smooth consistency using an electric hand mixer.
Add a little milk or Yellow Pea flour as necessary, to get a reasonably smooth consistency.
Ready your pancake pan or griddle by brushing with Apricot Kernel Oil and turning onto a low heat.
Using a wooden spoon, pour a little of the mix onto the heated pan — enough say, for a large-size pikelet.
Using a large egg-flip after about 30 seconds only, turn the pancake over and check if it is golden brown.

TIP: Try not to overcook the pancake mix in the pan, as it will harden the pancake and try to flip them only once.
TIP: If you are able, use a lid on the pancake pan to help force the heat through the pancake.

Serve these delightfully creamy pancakes on their own or with thickened cream and fresh strawberries, drizzled with honey, your favourite seasonal fruit such as blueberries, or with farmer’s cheese /cottage cheese on top.
