    Chocolate Coconut Fudge Slice and Cherry Ripe Slice

     

    This is a great recipe that you can make any time of the year and is also a healthy Easter treat that is so easy to make. The kids will love it! I have included a modification to it to make a yummo Cherry Ripe Slice!

    Method

    Process together until well blended. Scrape and press into a baking paper lined container - sprinkle with more desiccated coconut and set in Freezer. When solid cut into pieces and store in the fridge in glass container.

    Cherry Ripe Slice

    This recipe can also be modified to make a healthy take on an old favourite

    I turn this recipe into what I call a Cherry ripe slice by omitting the Blendz Cacao and adding 10g of Strawberry Powder or blitz 1 cup of frozen berries defrosted into a paste and 70g of chopped dried Sour Cherries into the mix. I then top with Chocolate: 1/4 c raw cacao and 2 tbsp of Maple syrup or coconut syrup and 1/4 cup coconut oil. Cook until melted together and runny and pour over and place in freezer until set. Again slice and keep in fridge in glass container.

    There are three ways to top this:

    1: With Chocolate: 1/4 c raw cacao and 2 tbsp of Maple syrup or coconut syrup and 1/4 cup coconut oil. Cook until melted together and runny and pour over and place in freezer until set. Again slice and keep in fridge in glass container.

    2: With Coconut... Easy peasy, take a can of Coconut Cream - shake well and put into freezer until cold but not set and blitz in processor until thickened. If its not working for you add a tsp of Xantham Gum.

    3: As pictured - do both - why not!! :)
