    Orange and Lime Almond Cake

     

    This is a quick and easy cake recipe to have on standby for when you have guests and is great fro lunch boxes. You need to cook the oranges for a few hours but the rest is easy peasy!  

    This is a quick and easy cake recipe to have on standby for when you have guests and is great fro lunch boxes. You need to cook the oranges for a few hours but the rest is easy peasy!

    Method

    Place whole unpeeled oranges into a pot and cover with water. Bring to boil and then simmer for 1-1/2 to 2 hours. Remove from heat, drain water and allow to cool. Slice away nearly all the peel and rind leaving only a small amount to add to the mix. You can leave all skin on to blitz but I find it makes a more bitter cake.

    Once oranges are blitzed and smooth place all remaining ingredients into a Thermomix or food processor and blend together until smooth. Pour into a lined tin and bake for 30-45 minutes or until a skewer comes out clean.

    Allow to cool serve with fresh whipped cream, fresh orange slices and a sprig of mint always looks great on the plate.
