Powerup Powergen Protein Brownie
It never ceases to amaze me what I can use our wholefood protein formulas for!
- 300g dates
- 120g Coconut Oil
- 35g cacao powder
- 1/2 tsp baking powder
- 50g macadamia nut halves
- 50g walnuts chopped
- 3 eggs
- 20g Powergen Protein either in Raw Cacao or Coconut
- 30g NEHP Gluten Free Flour Blend
- pinch of good quality salt
- 90g Organic chocolate (use drops or chop into pieces)
Cover and soak the dates in hot water (I boil the kettle then wait for a minute to let it come off boiling temp) for 1/2 hr then drain.If they are not pitted it is very easy to remove the dates after been soaked so do it then if you need to.
Preheat oven to 160C . Line a square or rectangular tin with baking paper.
Blend dates with coconut oil until a paste forms. Add all ingredients except nuts and mix together. In the Thermie I used the kneeding button.
Stir through nuts by hand and pour into lined tin and bake for approx 40 mins or until a skewer comes out clean.
Serve hot as a scrumptious desert with a warm chocolate sauce and some whipped cream or this makes a great slice to have with a tea/coffee and is ideal for lunchboxes (check on nut policy of school).
