Raw Coconut and Peppermint Chocolate Slice
- 3/4 cup coconut oil
- 1/4 cup coconut cream
- 1/4 maple syrup
- 1/2 cup raw cacao powder
- 4 drops of pure peppermint oil
Put 3/4 cup coconut oil with 1/4 cup coconut cream, 1/4 cup maple syrup, 1/2 cup raw cacao powder and 4 drops of pure peppermint oil in a saucepan or thermomix and stir until melted and blended. Pour over flaked or desiccated coconut that you sprinkle over a lined baking tin. Place in freezer until firm then slice and enjoy. Keep refrigerated.
The option to change this recipe to a jaffa flavour is easy with the change of essential oil used. You can aso use ingredient’s with or instead of the coconut flakes ie; chopped almonds – roast them first if you fancy.
